- Super easy Keto recipe to make, and taste so good. Have you ever had English muffin pizza, this reminds me of those days as a kid. But I love pizza and this keto pizza is the bomb.

INGREDIENTS
- · 1/4 cup + 1/2 cup shredded mozzarella, split
- · 1/2 tsp xanthan gum
- · 1 large egg, beaten
- · 1/8 tsp garlic powder
- · 1/8 tsp onion powder
- · 1/8 red pepper flakes
- · 1/8 tsp Italian seasoning
- · 2 TBSP low carb marinara or pizza sauce (I use Rao’s)
- · 8 slices of pepperoni
DIRECTIONS
- Combine the egg, garlic / onion powder, red pepper flakes and Italian seasoning and ½ cup of the cheese process (Iused a food processer). Just a quick mix and don’t over mix it as you want chunks of mozzarella in it.
- Lightly spread about 1.5 TBSP of the remaining mozzarella on a preheated mini waffle maker then add half of the batter on top. Top the batter with another 1.5 TBSP of the remaining mozzarella.
- PUT down the lid of your waffle maker and cook until you no longer see steam (5-6 minutes), then remove to oven rack for your oven or toaster oven. Due the same with second chaffle
- Repeat if you want more pizza crust.
- Top each crust with 1 TB marinara, remaining mozzarella, and pepperoni. Place under a broiler (oven or toaster oven) until the top looks the way you like it (6 minutes in a toaster oven for me).
