Filipino Meatloaf ( Embutido)
This is a real great recipe and the favors just pop together. For most people this will be a new interest experience. This is a super low carb meal, only 2 net carbs per serving
Ingredients
1lbs Ground beef (can use pork) 80/20
1 raw egg
Seasoning
Onion powder, garlic powder, Cayenne pepper, salt and pepper
2 Small sweet pepper
1 all beef hot dog (check to make sure its beef and salt only)
Cheddar cheese
2 hard boiled eggs
1TBSP Ketchup (sugar free)
Direction
Combine the meat with the raw egg and the seasoning (season to your taste) mix until everything is well incorporated.
Roll out a piece of aluminum foil about 18 inch long
Put half the meat on the foil and press it into a flat square
Spread cheese on top of the ground beef
Cut the hot dog in half (long way) and the pepper into strips and cut the hard boil eggs into quarters.
Place half a hot dog on the ground beef than a few strips of the pepper on top and some of the egg quarters
Roll the beef up to trap the hot dog and other ingredients in the middle of the beef. (Kind of like a swiss roll) and create a round tube inside the aluminum foil. The foil should cover the entire roll of beef. Twist the ends to completely close the foil around the meat so it cooks in the juices.
Repeat to make the second one. Place on a cookie sheet
Put in the oven at 350 for 30 to 40 minutes
Enjoy
