Sometimes you feel like an Almond Joy but without all the guilt! These sugar-free candy bar inspired keto cookies is filled with delicious chocolate, almonds and of course coconut in every bite! These really are the best keto cookies. Delicious

Ingredients
- ¾ cup Softened butter
- 1/3 cup sweetener
- 1/3 cup brown sweetener (I used Allulose)
- ½ teaspoon apple cider vinegar
- Two large eggs
- Two teaspoons vanilla Extract
- 2 1/2 cups of Almond Flour
- 1/8 cup coconut flour
- ½ cup Slivered almonds
- One cup unsweetened coconut flake
- ½ teaspoon baking soda
- ½ teaspoon Kosher salt
- ½ cup sugar free chocolate chips (I used choc-zero)
Instructions
- Preheat oven to 350F and line 2 cookie sheets with parchment paper or a silicone baking mat.
- In a large mixing bowl combine the softened butter and granular sweetener with a hand mixer.
- Now add your eggs and vanilla, mix until combined.
- In a separate bowl combine almond flour, coconut flour, baking soda, salt, almonds, and coconut flakes.
- Mix with wet ingredients until well combined.
- Fold in your sugar-free chocolate chips.
- Scoop 16-18 jumbo cookies onto lined baking sheets. Flatten them a little by gently pressing down with your fingertips.
- Place it into already preheated oven and bake for 15 minutes or until slightly golden around the edges. Let cool for about 30 minutes and serve. Because I used allulose you might want to use 325F for 18 minutes.
Notes
- Allulose browns faster than other sweeteners so you might want to cook at a lower temperature for a longer time.
