Keto/Low Carb Marry Me Chicken

Ingredients: 

  • 2 chicken breast
  • ½ cup of almond flour (could use coconut or other nut flour)
  • Salt, pepper, garlic powder and paprika or any seasoning you like
  • 2 tbsp of oil
  • 2 tbsp butter
  • 2 tbsp garlic
  • 1 cup chicken broth
  • 1 cup heavy cream
  • 1 cup parmesan
  • 4 oz of mushrooms
  • Red pepper flakes, oregano and thyme or any seasoning you like
  • Fresh basil
  • Riced Cauliflower to serve

Method:

And here’s how to put the delicious dish together:

  1. Cut up chicken breast for the desired amount of people.
  2. Season the almond flour with salt, pepper, garlic powder and paprika.
  3. Pad dry the chicken and then coat the chicken breast in the almond flour mixture and set them aside. Let sit for about 15 minutes
  4. In a pan on medium heat, combine two tablespoons of oil and two tablespoons of butter.
  5. Cook your chicken breasts for about 5-6 minutes on each side or until the crust is golden.
  6. Remove the chicken from your pan and set a side, add two tablespoons of garlic minced garlic and mushrooms then deglaze your pan with a cup of chicken broth.
  7. Lower the heat and add a cup of cream and a cup of parmesan cheese.
  8. As the sauce thickens, add red pepper flakes, oregano and thyme.
  9. Serve the chicken and sauce over a serving of riced cauliflower.
