This is a very delicious keto recipe. Its one of my favorite ways to cook chicken.
This recipe makes a about 4 serving. It is really easy to make but does take the chicken a while to cook.
Prep time is 20 minutes and cooking time is 45 minutes
Ingredients
½ small onion
3 garlic cloves
2 TBSP avocado oil
2 lbs. Chicken (we used legs, but wings and thighs work well)
1 TBSP fish sauce
Black pepper to taste
3 whole bay leaves
1 TBSP crushed red pepper
1 tsp spicy vinegar
1 tsp lemon juice)
1 tsp brown sweetener (I use lakanto )
Directions
- Take the onion and garlic and mince them up
- Heat pan and add the avocado oil and onion and garlic and cook until they are caramelized
- Add the chicken and cook until the outside of the chicken is brown (just the outside of chicken)
- Add the fish sauce, black pepper, bay leaves and mix around best you can.
- Cover and cook for 30 minutes and turn every few minutes
- Add the crushed red pepper, spicy vinegar, lemon juice, and brown sweetener
- Mix it into the juices and turn heat down to a simmer and cover and cook for addition 15 minutes (turn chicken ever few minutes)
Seve with side dish of your choice
