UBE ROLL Cake

Ingredients
4 large egg whites (room Temp works best)
1 tsp vinegar
¼ cup sugar sub
¾ cup almond flour
½ tsp baking powder
½ tsp xanthan gum
Pinch of salt
4 egg yolks
1 tsp vanilla extract
¼ cup almond milk
3tbsp coconut oil
1 tbsp of ube extract
Filling Ingredients
180 gram or ¾ cup Cream cheese (12.7 TBSP or 7 oz) Room temp
¼ cup sweetener
3 tbsp heavy whipping cream
1/3 cup Young shredded coconut strips
1tsp vanilla extract
Coconut covering
Optional ¼ cup desiccated coconut
Ube extract
Direction
1 Take the 4 egg white and put them into a bowl and then add the sweetener, mix until the eggs are stuff and come to a peak.
2 Take the 4 egg yolks and mix, add the almond milk , Vanilla extract, Coconut oil, vinegar and thoroughly mix together
3 Stiff the almond flour into the wet ingredient, add the baking powder, xanthan gum and mix completely
4 Add Ube Extract
5 Mix well until fully incorporated
6 Add egg whites and mix gently until combined
7 Put parchment paper on cookie sheet and lightly grease
8 Pour cake mixture onto the cookie sheet and spread levelly across the pan
9 Preheat oven to 350 degrees
10 Bake in oven at 350 for 25 min (check at 20 min as you do not want to over cook the cake)
11 While cake is in the oven start to mix your filling
12 Mix to together cream cheese, Sweetener, Vanilla, heavy creamer, young coconut strips
13 With a hand mixer beat until you get a good creamy filling, divide in two parts (1/3 set aside, 2/3 will be for filling)
14 Take cake out of oven and let cool for at least 10 minutes
15 Once the cake is at room temp spread 2/3 of the filling on the cake
16 Now roll the cake and use a spatula to help separate the cake from the parchment paper
17 Once the cake is completely rolled wrap in plastic wrap (saran wrap) Place in refrig
18 Put the desiccated coconut in a bowl
19 Add the ube extract and mix together until the coconut is turn purple and its full incorporated
20 Take ube out of the plastic wrap and put on plate (or platter) Apply the remaining frosting to the outside of the roll cover the top and sides completely
21 Gently sprinkle the coconut on the roll to cover the top and side, use a spatula to help cover the sides if needed
